Healthy eating recipe: Avocado bake

The Avocado bake is a simple dish that fits within the Paleo diet. Whether you’re looking for a healthy snack or lunch and dinner idea, this recipe will surely tickle your taste buds.


Fresh eggs
Salt & pepper
Spinach (fresh or thawed)
Hot sauce (if desired)
Pickled okra (if desired)


1. Cut avocados into equal halves and remove the pits (You may need to hollow out some of the flesh in order to accommodate the entire egg).
2. Fill the avocado’s empty well with the contents of one raw egg.
3. Sprinkle with salt and pepper to taste, as well as other herb toppings like chives or scallions. We chose to add spinach.
4. Bake at 425 degrees Fahrenheit until the egg is cooked through (approximately 20-25 minutes).
