Low carb recipe: Salsa egg muffin

Ingredients

For 6 muffins
5 eggs
Half of an onion
Half of a bell pepper
5 oz of salsa
2 oz of sharp cheddar cheese
1 clove of garlic
A pinch of salt & pepper

Directions

1. Saute chopped onion and pepper in butter until onion is translucent. Add garlic and continue to saute for another minute. Allow mixture to cool completely.
2. Combine this cooled mixture with the beaten eggs, shredded cheese, salsa, and salt and pepper.
3. Fill lined muffin wells with the mixture and bake at 400 degrees Fahrenheit for 25 minutes.
4. Garnish with cilantro and hot sauce for an extra kick.
